  • 65g sweetcorn kernels

  • 65g carrot, chopped

  1. Melt half the butter in a medium saucepan over medium heat. Add sweetcorn, peas and carrots, and saute for 3 to 5 minutes, until soft. Remove from pan and set aside.
  2. Add rice and remaining butter to pan. Fry rice for 2 or 3 minutes, until translucent, but not brown.
  3. Return the vegetables to the pan with the rice. Add the chicken stock and milk. Bring to the boil, reduce heat to low and cover. Cook for 20 minutes, until rice is soft and liquid absorbed.
  4. Fluff rice with a fork, cover again and let stand 5 minutes before serving.

Make it vegan

You can use oil instead of butter and vegetable stock instead of chicken stock and milk for a vegan version.

Heat a large heavy saucepan with a tight-fitting lid over medium heat. Add oil and rice and cook, stirring, until the rice is just beginning to brown, 4 to 5 minutes. Add onion and salt and cook, stirring, until the onion begins to soften, about 2 minutes. Add garlic and cook, stirring, until fragrant, 1 minute more. Pour tomato sauce over the rice and cook, stirring, for 1 minute.

Stir in broth and bring to a boil. Reduce to a simmer, cover and cook until the rice is cooked, about 15 minutes. Stir in vegetables and serve.

Brown Rice Variation: Use 1 cup long-grain brown rice and 1 3/4 cups broth. In Step 2, simmer for 45 minutes. Remove the rice from the heat and let stand, covered, for 15 minutes before adding the vegetables.


This recipe can store for up to a week in the refrigerator and up to 3 months in the freezer. To store, let the rice cool completely, then store in an air tight microwave safe container. If freezing, you can store in a ziplock bag. Be sure you expel all the air from the bag before freezing to prevent freezer burn on the vegetables.

Another way to make this recipoe for storage in the freezer is to add the uncooked veggies (carrots and string beans) to the cooled rice and freeze. Dont worry the veggies will soften while reheating the rice.

I had a craving for Mexican rice but no clue how to make it. TGFI – Thank God For Internet. Being a denizen of So Cal I’ve gotten spoiled on good Mexican food so I looked for an authentic recipe that used mostly fresh ingredients and was easy enough for me to make. This is it! As flavorful as any restaurant or better. I rarely pass on an opportunity to use a new ingredient or learn some new culinary skill, and in this case I did both. I took Gabreila’s advice and used avocado oil instead of my trusty olive oil. The instant it hit the pan the aroma told me this was going to be like what I’ve had south of the border. I also appreciated Rebecca’s tip to replace regular tomato sauce with El Pato – although I did use a little jalapeno despite the sauce being piquant. Everything else was per the recipe. Did I mention I’m not afraid of spicy?

I wouldn’t consider myself more than an average skill cook and tend to follow recipes to the letter – at least the first time. It was unclear to me how to toast the rice at first so I put just the rice with some oil in the pan until toasty golden-brown, set it aside, and added it back in after sautéing the vegetables. It was then that I realized I could have gone step by step as written and achieved the same result, so I quickly added the remaining ingredients and 15 minutes later it came out perfect! Fluffy, not burnt or mushy. and delicious. Thank you for this recipe! My craving is satisfied – but this is going to become a regular side dish.

What can I substitute from bell pepper?

Hi Kelli – it’s normal for a little bit to get stuck to the pan as it simmers. Perhaps you might try with a slightly lower heat next time and see if that helps. :)

I love you website and all the recipes, this post is only for those people that are looking for the REAL flavor of Mexican rice. I am from Mexico and your recipe is very close to the authentic recipe, however for truly authentic arroz rojo (red rice) Mexican rice, do not use olive oil since it changes the flavor of the rice. Olive oil is used in Spanish rice. Use avocado oil instead. Also, the green peppers are more a tex-mex ingredient and they too change the original flavor I would avoid them completely. Just boiling the jalapeno with the broth is enough. Cumin is optional and it is a regional ingredient from northern states in Mexico. Cilantro can be added to the boiling water for added flavor and discarded before serving. Obviously, the cook always has the final choice. Enjoy!

It is not just a signature Mexican and Southern American dish, but also an important accompaniment to have with other dishes such as burritos, ground meat tacos, and enchiladas. The beauty of this dish is that it can be custom-made to suit your taste buds. Tomatoes are the predominant ingredient in this dish. Some either make the rice with blended tomatoes, or tomato sauce. Others make it with tomato bouillons or with a ready-made Latino flavored blend of tomato, chicken , onion, parsley, and spices, known as Caldo de tomato. Once the rice is properly mixed with the tomato base, add some vegetables of your choice like peas, carrots, corn, and bell peppers and you would be good to go.

Veggie-Packed Spanish Rice Recipe By Oh My Veggies

Let me introduce you to my new favorite version of Spanish rice (or otherwise known as Mexican rice). So often when I have this side dish at a restaurant I find it lacking in flavor. But when you make it at home? You have complete control.

Now, I am by no means saying this version is authentic, but it sure does make an excellent side to any sort of Mexican fare. It is full of diced vegetables, like onion, carrot, pepper and corn. However, you can easily customize the veggies to your taste. Don’t like peas? Leave them out. Want a little more kick? Add in a jalapeno. There are also plenty of spices and a good amount of tomato flavor in the mix, making this rice anything but bland.

One of the best parts about this rice is that once you have it going and all the ingredients are added to the skillet, it is very hands-off. You can let the rice simmer gently (and then rest after cooking) while you take care of your main dish.

One of the key components of this recipe is lightly browning the rice in the skillet before you add the cooking liquid. You want to make sure you keep an eye on the rice and do not walk away during this process. You’ll need to stir fairly often at first, and then almost constantly toward the end so that it browns evenly and doesn’t burn.

When the rice is cooking in the liquid, you also want to make sure that it is gently simmering. Otherwise, if you have the heat going too strong, the rice will absorb the liquid too fast and will not be fully cooked.

And lastly, make sure you don’t skip the step to let the rice sit covered with the heat off after it's finished cooking. This rest time helps give it the perfect texture.
