Ingredient:

3 carrots,

100 ml oil,

Preparation:
It's the simplest cooking soup I've ever known. Let's see what we have to do.
First we clean the carrots, parsley, parsnips, celery, onions, potatoes. Cut the onion into small pieces, peel and wash the potatoes, cut them into larger cubes, like for a potato soup and put them aside in cold water. Carrots, parsley, parsnips and celery are cut into small cubes. So far nothing complicated I say. Do you agree with me?
What was harder is over. We go on to prepare the vegetable soup, as the fast ends and we are still talking & # 8230
Heat 100 ml of oil, sauté the finely chopped onion until it becomes glassy, ​​add the diced vegetables and sauté everything for another 10 minutes. We pull the pot aside, sprinkle 1 tablespoon of paprika on top, I tell you honestly, I put half a tablespoon of paprika, half a hot paprika, because we Transylvanians, although we are softer, like to eat more spicy & # 8230. it hurts, it hurts, we are quick and we smell like we are too quiet sometimes & # 8230, then we mix and pour over the water about 2.5 l & # 8211 3 l. Season with salt and ground pepper to taste and let it boil covered until the vegetables are boiled. Now it's time to add the potatoes cut in the juice and leave it on the fire until the potatoes are cooked. If you still need it and the soup is too thick, we can add more water and season with salt and ground pepper. At the end we sprinkled chopped green parsley on top.

  • 50 g noodles
  • 70 g zucchini
  • 20 g parsnips
  • 2 tablespoons olive oil
  • parsley
  • salt.

Preparation of vegetable soup:

We wash the vegetables well, clean them and cut them according to preference. I cut the carrot and parsley into slices, zucchini, onion and pepper into cubes.

In a saucepan put the olive oil, then the vegetables and salt, let them harden over low heat for about 10 minutes, stirring occasionally.

After the vegetables have hardened, add 2 and a half liters of water, let it boil for 1 hour. Add the noodles and let the vegetable soup boil for about 7 minutes.

We turn off the heat and the vegetable soup is ready. Sprinkle with freshly chopped parsley.

If you want a sour vegetable soup, you can put borscht (leave it to boil for another 5 minutes) and at the end, freshly chopped larch.

Possible variations

  • 1 cup grated carrot
  • 2 cups fodder cabbage (Kale), broken into small pieces
  • 1 cup diced celery or green beans
  • 3 cups of broccoli bunches
  • 1 cup diced tomatoes
  • ½ cup of lemon juice
  • ¼ borscht cup (for sour)
  • 1 tablespoon olive oil
  • 6 cups of water

Spices and condiments:

  • 1 tablespoon crushed garlic
  • 1 tablespoon chopped ginger
  • 1 teaspoon turmeric
  • ¼ teaspoon of ground cinnamon
  • ¼ teaspoon cayenne (or paprika)
  • salt and pepper to taste

Method of preparation

Put a large saucepan on the fire. Add the finely chopped oil and celery. Then add the carrot, garlic and ginger.

Cook these vegetables for 5 minutes to soften slightly.

Add broccoli and tomatoes. Sprinkle with salt, stir and cook for another 5 minutes.

Pour the water and borscht. Put the lid on the pot and bring to the boil.

When the water starts to boil, turn the heat to low and add the turmeric, cinnamon and cayenne. Then add the lemon juice and mix.

Also now add red cabbage and kale (kale). Stir gently and let the vegetables boil for about a quarter of an hour, or until soft.

Recipe no. 2

This is a soup made with vegetables cut into long and thin strips (Julienne style), as you probably tasted at your grandmother's. You need the following ingredients:

  • 1 red
  • 3 cloves of garlic
  • 1 teaspoon of paprika
  • 3 tablespoons extra virgin olive oil
  • 1 large onion
  • 2 carrots
  • 50 grams of celery
  • 50 grams of leeks
  • 50 grams of radishes
  • 1/4 white cabbage
  • salt and pepper to taste

Method of preparation

  • Wash all vegetables well and clean the ones they need. You can add other vegetables, such as: pumpkin, peas, cauliflower, cumin or turnip. Always use seasonal vegetables, although this is a dish that is eaten in winter, you can eat soup in summer, after it cools down.
  • Cut all vegetables (except tomatoes) into long, thin strips, as equal as possible. That way, they will boil faster.
  • Wash and chop the parsley.
  • Peel and crush the garlic.
  • Cut the tomatoes into cubes.
  • In a large pot, heat the oil and add the garlic. Heat it until golden, stirring with a wooden spoon.
  • Sprinkle the teaspoon of paprika.
  • Then add all the vegetables (except the tomato and parsley).
  • Heat lightly for 2 or 3 minutes.
  • Add water and simmer for 30 minutes.
  • Season with salt and pepper and add the nutmeg.
  • The soup is ready when all the vegetables are soft.

This vegetable soup does not lack carrots, parsley, parsnips and celery. Depending on the season and preferences we can add peas, mushrooms, green beans, leeks or onions, peppers, goulash, cauliflower or other vegetables you like.

There is also greenery: parsley leaves, celery, celery stalk (celery) and I keep some parsley for serving.

Vegetable soup can be served plain or with flavored bread croutons (the recipe here). Those who do not follow Orthodox fast (dairy and eggs are allowed for the rest) can boil some homemade noodles (see here) or a few fluffy semolina dumplings (see here).

This vegetable soup is light and cheap. From the quantities below it results approx. 6 servings.


  1. Wash and clean the vegetables. Leave the onion whole, with the tail, so that it does not spread in the soup when it boils. You either leave the carrots whole and cut them into rounds after they boil, or cut the rounds raw and boil them like this. You give half the peppers. Leave the parsley root, parsnips and celery whole.
  2. Put a pot of soup on the fire, add the oil and cook all the vegetables for 3-4 minutes.
  3. Pour about 2 liters of water and leave the pot on the fire until all the vegetables are well cooked.
  4. After the vegetables have boiled, remove them from the soup and turn the heat to low, while you prepare the dumplings. If the water has dropped a lot, refill it and let it boil.
  5. Before you put the dumplings in the soup, add half a glass of cold water, help the dumplings not to fall apart. So the water in the soup should not be boiling.
  6. Let the dumplings boil until they double in shape or leave at the bottom of the pan.
  7. Season with salt and freshly chopped parsley!
  1. Beat the two eggs well with the salt powder, then add the baking powder and spoon the semolina, stirring gently. The final composition should have the consistency of a thick cream, to remain streaked when you pass the tip of the fork on top, but to cover again.
  2. Let the dumpling composition rest for 5 minutes, then with a spoon soaked first in the hot soup add the dumplings. Immerse the spoon for a few seconds and stir gently until the dumpling falls out of it.

The result: a good soup, healthy and full of vitamins that goes in any season!
