Zucchini zucchini fritters


Hash browns:

  1. Zucchini 1 kg
  2. Dill 20 g
  3. Mint leaves 10 g
  4. Onion 50 g
  5. Brynza 200 g
  6. Wheat flour 150 g
  7. 2 eggs
  8. Vegetable oil 2 tbsp
  9. Salt 1 tsp

Zaziki sauce:

  1. Cucumber 150 g
  2. Natural yogurt 350 g
  3. 2 cloves of garlic
  4. Dill 10 g
  5. 2 tbsp olive oil
  6. Red wine vinegar 1 tbsp
  7. Salt 1 tsp

Step 1 - Prepare the Zucchini.

On a fine grater, grate the zucchini, sprinkle with salt and transfer to a colander, leave for 30 minutes, remove the liquid from the zucchini and squeeze it carefully.

Step 2 - Add the greens.

Finely chop onions, dill, mint leaves and add to the zucchini.

Step 3 - Add the feta cheese and eggs.

Add chopped feta cheese and 2 beaten eggs. Mix everything.

Step 4 - Add Flour.

Add wheat flour and mix thoroughly.

Step 5 - Time for frying.

Heat the pan over high heat, add 2 tbsp. vegetable oil and spoon the dough. Form round fritters. Fry on both sides over low heat for 3 to 4 minutes until golden brown. Serve hot with greek zaziki sauce.

Step 6 - Don’t forget about the sauce.

Zaziki sauce: cucumber, garlic, and dill, finely chopped, mix with yogurt. Add garlic, dill, olive oil, vinegar and salt, mix everything thoroughly. Put the yogurt in the refrigerator for 30 minutes. Before serving, pour a teaspoon of olive oil on top.
