Secrets of delicious dumplings: perfect dough + juicy filling!

Ingredients

Dumplings dough:

  1. Sifted wheat flour 500 gr (3 tablespoons with a volume of 250 ml + 1 tablespoon)
  2. Hot water 70-75 degrees 250 ml
  3. Egg 1 pc. (small)
  4. Salt 1 tsp without slide
  5. Vegetable oil 25 gr (3 tablespoons)

Filling:

  1. Minced meat 550 gr (beef + pork)
  2. Onion 200 gr
  3. Salo 30 gr (optional, if lean meat)
  4. Water 70-80 gr (see the forcemeat consistency)
  5. Salt 1 tsp without slide
  6. Black pepper to taste
  • Main ingredients: Beef, Pork, Onion, Flour

Cooking:


1. Add salt, egg and vegetable oil to the flour. Mix. Slide the egg slightly towards the edge of the bowl so that it does not boil. Pour flour with hot water, knead the dough with a spoon, and then with your hand. If you see small blotches of cooked yolk - it's okay, they will disperse with further kneading of the dough. Knead the dough for 7 minutes until completely homogeneous. The dough does not stick either to the hands or to the surface, so you can optionally add flour. Cover the dough with a towel and let it rest for 20-30 minutes.

2. Prepare the filling, grind meat, lard, onion. Salt, pepper and add water.

3. Take a piece of dough weighing 120 grams, roll it to the size of the dumplings, sprinkle with flour the side of the dough that you will spread on the dumplings, so that the finished dumplings depart well from the dumplings. Put the minced meat in the cells. See that the minced meat does not fall on the dough around the cells, so the dumplings are well-dazzled. Roll out a piece of dough weighing 80 g, cover the dumplings, roll well with a rolling pin. We put the rest of the dough under a towel so that they do not ventilate, they can be reused.

4. Cooked dumplings boil in salted water with bay leaves, peas of black pepper and onions. Boil 3 minutes after they pop up. Serve with butter.

5. From this amount, 5 dumplings or 185 dumplings are obtained. Put ready dumplings on a flour-sprinkled surface and freeze.
