Stuffed Eggplant

Ingredients for Cooking Stuffed Eggplant

  1. Eggplant 3 pieces (small size)
  2. Minced meat 500 grams
  3. Onion 1 piece
  4. Bay leaf 2 pieces
  5. Tomatoes 2 pieces
  6. Dried Oregano 1 tablespoon
  7. Dried thyme 1/2 tablespoon
  8. Allspice 1/2 tablespoon
  9. 1/2 tablespoon cinnamon
  10. Vegetable oil 2 tablespoons
  11. Fresh parsley to taste
  12. Cheese to taste
  13. Salt to taste
  14. Ground black pepper to taste

Inventory:

Kitchen knife, blender, cutting board, tablespoon, kitchen knife, baking tray, parchment for baking, spatula, grater.

Cooking eggplant stuffed with meat:

Step 1: prepare the ingredients.


Rinse vegetables and greens, peel the onion, and grate the cheese.

Divide the eggplants into halves and cut the bulge from the back so that the vegetables are stable on the baking sheet.

Make oblique cuts on the flesh of the eggplant.

Cut the onion into large slices and fold into a blender.

Chop the onions.

Peel the tomatoes from the skins.

And cut the tomatoes into small cubes.

Step 2: bake eggplant.


Pour eggplant with a little vegetable oil.

Put the eggplant in the oven on 20 minutes bake at medium temperature.

Step 3: prepare the filling.


Heat oil in a pan, throw chopped onions into it.

Fry the onion until soft and until it begins to become transparent.

Add minced meat to the onion and stir it and fry it until brown.

When the meat changes color, add chopped tomatoes to it and mix, without removing the pan from the heat.

Add all the spices listed in the list of ingredients and mix while continuing to simmer.

Add chopped greens. Mix again and remove from heat.

Step 4: stuff the eggplant.


When the eggplants are ready, remove them from the oven, remove the pulp with a spoon.

Scrub the vegetables so that there is a boat with edges about half a centimeter thick.

Add the eggplant pulp to the stuffing to the minced meat and vegetables. Shuffle.

Start the eggplant boats with meat filling, filling the vegetables tightly.

Sprinkle grated cheese on top.

Step 5: bake eggplant stuffed with meat.


Return the stuffed eggplant to a hot oven and cook about 10-15 minutes, so that the cheese melts and turns into a delicious crust.

Step 6: serve the eggplant stuffed with meat.


Serve aubergines stuffed with meat and serve hot as a main course. No sauce or side dish, in my opinion, is needed for them. Tasty, lick your fingers!
